Shrimp Scampi With Pasta
- 1 c. chopped onion
- 1 tsp. garlic powder
- 2 Tbsp. butter
- 3 Tbsp. olive oil
- 1 c. water
- 1 Tbsp. instant chicken bouillon
- 1 tsp. crushed basil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. small shrimp
- 10 oz. pkg. pasta
- 1/4 c. melted butter
- 1/2 c. Parmesan cheese
- Saute onion and garlic in 2 tablespoons of butter and the olive oil in 2-quart saucepan until tender but not brown.
- Add water and instant bouillon, basil, salt and pepper.
- Bring to a boil!
- Reduce heat.
- Simmer for 12 to 15 minutes or until reduced by 2/3rds.
- Add shrimp; simmer covered for 5 minutes or until done.
- Add pasta and 1/4 cup melted butter.
- Add cheese and toss to mix well.
