Mexican Fritters

  1. Combine water, butter, 1 teaspoon sugar, salt and nutmeg in 2-quart saucepan.
  2. Heat over medium-high heat until butter is melted, stirring occasionally.
  3. Increase heat to high.
  4. Bring to a full rolling boil.
  5. Add flour all at once to saucepan; remove from heat.
  6. Beat with wooden spoon until mixture forms smooth, thick paste.
  7. Cook and stir over medium-high heat 1 to 2 minutes until mixture pulls away from side of pan and forms a ball and a film forms on bottom of pan.
  8. Add eggs, one at a time, beating vigorously after each addition until dough is smooth and shiny. Stir in vanilla.
  9. Let dough stand at room temperature 15 minutes.
