Sweet And Sour Chicken Soup
- 1/3 cup onion, finely chopped
- 3 garlic cloves, minced
- 1/2 teaspoon fresh ginger, grated
- 6 cups chicken stock
- 1 1/2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 1/2 cups mushroom caps, sliced thin
- 1 1/2 cups chicken breasts, cooked and shredded
- 2 cups spinach leaves, thinly sliced
- 1 1/2 ounces angel hair pasta, uncooked
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- In a large soup pot, saute onion and garlic in 2 tsp olive oil for 3 minute.
- Add ginger for 30 sec.
- Add stock and mushrooms and bring to a boil.
- Cover, reduce heat, and simmer 30 minute
- Stir in chicken, spinach, and noodles; cook for 5 minute.
