Quick Beef And Cauliflower
- 1 lb. round steak, cut into 1/2-inch cubes
- 2 Tbsp. oil
- 1 medium head cauliflower, broken into flowerets
- 1 green pepper, cut into 3/4-inch pieces
- 1 clove garlic, minced
- 1/4 c. soy sauce
- 2 Tbsp. cornstarch
- 1/2 tsp. sugar
- 1 1/2 c. beef broth
- 1 c. sliced green onions
- 8 oz. mushrooms, sliced
- 3 c. hot cooked rice
- Brown steak cubes in oil in skillet.
- Add cauliflower, green pepper, garlic and soy sauce; mix well.
- Simmer, covered, for 8 to 10 minutes.
- Blend cornstarch, sugar and broth in bowl.
- Stir into beef mixture with green onions and mushrooms.
- Cook until thickened, stirring constantly.
- Serve over rice.
- Yield:
- 6 servings.
