Sante Fe Style Chicken Breasts
- 2 ripe avocados
- 2 small, ripe tomatoes, diced
- 1 small onion, diced
- 2 Tbsp. fresh cilantro, chopped
- 3 Tbsp. freshly squeezed lime juice
- 2 cloves garlic, crushed
- 1/2 tsp. chili powder
- 1 Tbsp. butter
- 2 Tbsp. orange marmalade
- salt and pepper to taste
- 4 boneless chicken breasts
- Cut avocado into large dice.
- Combine with tomatoes, onion and cilantro.
- Sprinkle with 2 tablespoons lime juice.
- Add salt and pepper if desired.
- Toss gently.
- Refrigerate, covered, until ready to serve.
- Melt butter in a skillet and saute the garlic.
- Lightly brown chicken on each side, then remove to a plate.
- To drippings in skillet, add marmalade, chili powder, salt, pepper and remaining lime juice.
- Return chicken to skillet and coat with glaze.
- Simmer until cooked through.
- Serve with guacamole.
