Chicken Tortilla Soup
- 1 chicken, boiled
- 1 onion, chopped
- 1/2 c. cilantro, chopped
- 3 carrots, sliced
- 2 zucchini, sliced
- 3 potatoes, cubed
- 1 c. frozen corn
- 3 celery stalks, chopped
- 1 jalapeno
- 2 tsp. cumin
- 1 (16 oz.) can tomato juice
- 5 Tbsp. picante sauce
- 1 Tbsp. crushed garlic
- salt and pepper to taste
- tortilla chips
- Monterey Jack cheese
- Boil chicken; save broth.
- Skim grease and discard.
- Combine chicken meat, broth, cilantro, potatoes, carrots, onions and celery and boil.
- When nearly done, add remainder of ingredients (except cheese and chips).
- Put tortillas in bowl; add soup and top with cheese.
