Chicken Parmesan Italiano(Makes 2 Servings)
- 2 Tbsp. Italian-style bread crumbs
- 2 Tbsp. shredded fresh Parmesan cheese
- 1/2 tsp. dried oregano leaves
- 1 Tbsp. lemon juice
- 1 small garlic clove or 1 tsp. minced garlic from jar
- 2 boneless skinless chicken breasts
- nonstick cooking spray
- Heat oven to 425u0b0. Line cookie sheet with foil; spray foil with nonstick cooking spray. In shallow dish, combine bread crumbs, cheese and oregano; mix well. In small cup or bowl, combine lemon juice and garlic. Brush both sides of chicken with lemon juice mixture. Coat with bread crumb mixture. Place on sprayed foil-lined cookie sheet. Lightly spray chicken with cooking spray. Bake at 425u0b0 for 15 to 20 minutes or until chicken is fork-tender and juices run clear.
