Buttermilk Apple Muffins And Glaze

  1. For muffins, preheat oven to 400u0b0F. Have ready 12 paper-lined muffin cups.
  2. In a large bowl of an electric mixer, beat first 7 ingredients until blended, about 30 seconds.
  3. Add the dry ingredients (flour, cinnamon and baking powder) and beat until dry ingredients are just moistened. Do not overbeat!
  4. Divide batter between the muffin cups and bake in a 400u0b0F oven for about 22-25 minutes or until muffins are lightly browned and a cake tester, inserted in center, comes out clean.
  5. Allow to cool in pan for 10 minutes, then remove from pan and continue cooling on a rack.
  6. For glaze, stir together all ingredients until blended. Brush tops of muffins with glaze.
