Patsy'S Hearty Meat Loaf

  1. Make sure fish is scaled good.
  2. Combine corn meal, salt and pepper.
  3. Place on foil in a flat pan or lay flat in a bowl.
  4. Coat fish on both sides with this mixture.
  5. Heat shortening in a large frying pan.
  6. Fry fish until golden brown and flaky on both sides. Remove fish from the pan and drain on a paper towel.
  7. Serve hot with lemon, hot sauce or catsup.
