Meringue Peaches(Light Dessert)
- 3 egg whites
- 1/8 tsp. salt
- 1/8 tsp. cream of tartar
- 1 tsp. vanilla extract
- 3 Tbsp. sugar
- 1 Tbsp. cornstarch
- 3 large ripe peaches, peeled and halved (about 1 1/2 lb.)
- 2 Tbsp. finely chopped walnuts
- Combine egg whites (at room temperature) in a large bowl at high speed of an electric mixer until foamy.
- Sprinkle salt, cream of tartar and vanilla over egg whites; continue beating until soft peak forms.
- Gradually add sugar, a tablespoon at a time, and cornstarch, beating until stiff peaks form.
- Place peach halves, cut side down in six 10-ounce custard cups.
- Spread peaches evenly with meringue.
- Sprinkle with walnuts.
- Bake at 375u0b0 for 10 minutes, or golden brown.
- Serve immediately.
- Yields six servings, 103 calories and 1.4 g fat per serving.
