Meringue Peaches(Light Dessert)

  1. Combine egg whites (at room temperature) in a large bowl at high speed of an electric mixer until foamy.
  2. Sprinkle salt, cream of tartar and vanilla over egg whites; continue beating until soft peak forms.
  3. Gradually add sugar, a tablespoon at a time, and cornstarch, beating until stiff peaks form.
  4. Place peach halves, cut side down in six 10-ounce custard cups.
  5. Spread peaches evenly with meringue.
  6. Sprinkle with walnuts.
  7. Bake at 375u0b0 for 10 minutes, or golden brown.
  8. Serve immediately.
  9. Yields six servings, 103 calories and 1.4 g fat per serving.
