Basil Pesto Couscous

  1. Bring water to a boil.
  2. Add couscous, butter and salt.
  3. Remove from heat and let stand 5 minutes.
  4. Topping: In a blender, blend all topping ingredients except the parmesan.
  5. (Alternately, use a ready made basil pesto).
  6. Cook blended mixture (pesto) in a pan until warm/hot.
  7. Mix the warm topping mix with couscous.
  8. Toss with parmesan cheese.
  9. Serve immediately.
