White Chili(Hot)
- 12 oz. Great Northern beans
- 1/2 gal. water
- 1/8 c. chicken soup base
- 2 c. onion, chopped
- 1 tsp. garlic
- 1/4 tsp. salt
- 3/4 lb. chicken
- 1/2 c. green chillies, diced
- 1 1/2 tsp. cumin
- 1 tsp. oregano
- 1 1/2 tsp. cayenne pepper
- pinch of ground cloves
- 1 lb. Monterey Jack cheese, shredded
- Soak and wash beans.
- Cover with water to 2 inches above beans.
- Let soak overnight.
- Drain beans; place in heavy kettle. Add to beans the soup base, onion, garlic and salt.
- Reduce heat and simmer for 2 hours; stir occasionally.
- Add chicken, chillies, cumin, oregano and pepper.
- Cover and cook for 30 minutes. Sprinkle cheese over each bowl of soup as it is served.
