Chicken And Sausage Jambalaya
- 2 c. onion
- 1 c. chopped green pepper
- 5 ribs celery, chopped
- 1/2 c. oil
- 2 to 3 tsp. chopped garlic
- 1 c. chopped parsley (1/4 c. dried)
- 2 to 4 lb. chicken breasts
- 4 c. bouillon (chicken)
- 3 to 4 c. rice
- 3 tsp. salt
- 1 tsp. cayenne pepper
- 2 to 3 tsp. Worcestershire sauce
- 2 c. water
- 2 lb. smoked sausage, cut in rounds
- Saute onion, green pepper and celery in oil over low heat. Add garlic and parsley.
- Remove from pot.
- Brown chicken slowly in remaining oil.
- Add bouillon, vegetables, rice, salt, cayenne pepper, Worcestershire and water.
- Cook over low heat 1 hour.
- Add sausage.
- Add more water, if necessary, and correct salt.
