No Sugar Apple Bran Muffins

  1. Saute apples in margarine 10 minutes or until tender.
  2. Pour boiling water over bran.
  3. Add apples, buttermilk, eggs, blackstrap molasses and dates.
  4. Combine flour, baking soda and spices; stir into bran mixture just until combined.
  5. Refrigerate in tightly covered container at least 24 hours.
  6. You can keep in refrigerator up to 3 weeks.
  7. Fill greased muffin pan 3/4 full and bake at 400u0b0 for 20 to 25 minutes.
