Pasta With Spicy Black Bean Sauce
- 1 medium onion, coarsely chopped
- 2 cloves garlic, minced
- 1 Tbsp. vegetable oil
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (16 oz.) can undrained stewed tomatoes, coarsely chopped
- 1/2 c. picante sauce
- 1 Tbsp. chili powder
- 2 tsp. ground cumin
- 1 tsp. crushed dried oregano
- 4 c. hot, cooked macaroni shells or rotini
- 14 oz. spaghetti, cooked and drained
- 1/2 c. margarine, melted
- 1 egg
- 1 lb. hamburger, browned and drained
- 2 c. spaghetti sauce (regular size jar)
- 2 c. Mozzarella cheese, shredded
- Temporarily empty the cooked spaghetti in a 13 x 9-inch baking dish.
- Melt margarine in the same saucepan in which you cooked the spaghetti.
- Cool slightly; stir in the egg.
- Pour spaghetti back in saucepan and mix well.
- Arrange cooked spaghetti over bottom of the 13 x 9-inch baking dish.
- Crumble browned hamburger over spaghetti; top with sauce and then sprinkle cheese over all.
