Green Rice
- 2 pkg. frozen cut spinach
- 3 c. Uncle Ben's rice
- 1 chopped yellow onion
- 3 chopped garlic cloves
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 8 chopped scallions
- 2 Tbsp. chicken bouillon
- 2 Tbsp. chopped parsley
- 2 tsp. chopped cilantro
- 2 tsp. salt
- 2 Tbsp. vegetable oil
- 1/2 chopped chili pepper
- 1 (4 oz.) can green peas
- Parmesan cheese
- Boil spinach in 4 1/2 cups water with bouillon; set aside. Heat the oil in a saucepan over medium heat; add the onion, garlic, celery, green pepper, scallions, chili pepper, 1 teaspoon parsley and 1 teaspoon cilantro.
- Saute until soft, about 5 minutes.
- Add rice and salt; saute for 5 more minutes.
- Add spinach and water, bring to a boil and stir once.
- Reduce heat to low, cover tightly and simmer for 25 minutes.
- Garnish with the rest of cilantro and parsley, green peas and Parmesan cheese.
