Black Bean Hummus Adapted From Penguin Drive-In
- 15 1/2 ounces garbanzo beans, rinsed and drained
- 15 1/2 ounces black beans, rinsed and drained
- 2/3 cup olive oil and canola oil (equal parts olive and canola)
- 1/3 cup water
- 1 tablespoon tahini
- 2 garlic cloves, small, chopped
- 4 teaspoons chili powder
- 1 1/2 limes, juiced (or to taste)
- 1 1/4 teaspoons kosher salt, plus more to taste
- 1 teaspoon cayenne pepper
- 1 pinch ground coriander
- 1 pinch ground cinnamon
- 1 pinch ground cumin
- pita chips, for serving
- Mix all the ingredients in a bowl.
- Puree the hummus mixture, in batches if needed, in a food processor until very smooth.
- Taste and season with salt.
- Transfer the hummus to a serving bowl and serve with pita chips.
