Three Bean Casserole
- 1 large onion, finely chopped
- 1 garlic clove, minced
- 3 Tbsp. bacon drippings
- 2 (10 oz.) pkg. frozen limas
- 1 (1 lb.) can tomato style baked beans
- 1 (1 lb.) can red kidney beans
- 1/2 c. chopped celery
- 1/2 c. ketchup
- 1/4 c. water
- 3 Tbsp. vinegar
- 1 Tbsp. brown sugar
- 1 1/2 tsp. dry mustard
- 1 tsp. salt
- 1 1/4 tsp. pepper
- 1 1/2 c. shredded Provolone or Monterey Jack cheese
- Saute onion and garlic in bacon drippings.
- Cook limas and drain.
- Add to onion.
- Add remaining ingredients, including 1/2 the cheese.
- Heat, then turn into 2-quart casserole.
- Sprinkle remainder of cheese on top.
- Bake for 30 minutes at 350u0b0.
