Spanish Rice With Lentils
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 (28 ounce) can tomatoes, broken up
- 1 (19 ounce) can lentils, drained and rinsed
- 1 cup long grain rice
- 1 cup water
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon red pepper flakes
- 1 medium green pepper, diced
- Use a large saucepan to heat oil over medium heat.
- Add garlic and onion and saute until onion is soft.
- Add tomatoes, lentils, rice, water and spices.
- Bring to a boil, reduce heat, cover and simmer for 20 minutes.
- Add water as needed, if rice starts to dry out.
- Add green pepper and simmer uncover for three minutes or until rice is tender.
