Hot And Sour Soup
- 4 to 6 oz. boneless pork
- 1 Tbsp. oil
- 4 c. chicken broth
- 8 oz. can bamboo shoots, drained
- 1 can bean sprouts, drained
- 1 small can mushrooms, drained
- 2 Tbsp. vinegar
- 2 Tbsp. soy sauce
- 1/4 tsp. pepper
- 1 Tbsp. cornstarch
- 2 Tbsp. cold water
- 1 beaten egg
- 1 or 2 diced green onions
- Slice pork in thin, bite-size pieces.
- Cook in 3-quart saucepan in hot oil until brown.
- Remove pork and set aside.
- In same pan, bring chicken broth to a boil.
- Add pork, bamboo shoots, bean sprouts and mushrooms.
- Simmer 5 minutes.
- Add vinegar, soy sauce and pepper.
- Blend cornstarch in cold water.
- Stir into soup, stirring until slightly thickened.
- Continue stirring and add egg.
- Garnish with onions and serve.
