Corn Relish

  1. In large Dutch oven or pan, combine corn, cabbage, onions and peppers.
  2. In a bowl, stir together remaining ingredients.
  3. Pour over vegetables.
  4. Bring to a boil, reduce heat and simmer for 10 minutes.
  5. Ladle into hot sterilized jars, 1/4-inch head space. Adjust caps.
  6. Process in boiling water bath 10 minutes.
  7. Let stand at least 1 week to blend flavors.
  8. Yields about 14 jars (12 ounces each).
  9. Very good on hamburgers, hot dogs or eat alone.
