Murphy'S Onion Soup

  1. In a large saucepan, melt butter then add onions, shallots and garlic. Cook for 10 - 15 minutes until soft but not browned.
  2. Add bay leaves, basil thyme, brown sugar, stock or broth and stout.
  3. Bring to a boil, then reduce heat to low and simmer, covered 25 - 30 minutes or until onions are tender. Season to taste with salt and pepper.
  4. Preheat the broiler, arrange heat proof onion soup bowls on a baking sheet. Ladle soup into bowls and sprinkle with cheese. Place 4" under broiler and broil 1 - 2 minutes or until cheese melts and starts to brown.
  5. Remove carefully with oven mitts, place on a serving plate and ENJOY!
