Weight Watcher'S Chocolate-Mint Parfaits

  1. Combine first 4 ingredients in a medium saucepan; stir well. Cook over medium heat 8 to 10 minutes, stirring constantly, until smooth and thickened.
  2. Remove sauce from heat and stir in mint flavoring.
  3. Spoon 1/4 cup ice milk into each of 4 parfait glasses. Top each with 1 tablespoon chocolate sauce.
  4. Repeat procedure with remaining ice milk and chocolate sauce.
  5. Sprinkle 1 teaspoon chopped pecans over each serving.
  6. Garnish with fresh mint sprigs, if desired.
  7. Serve immediately.
  8. Yields 4 servings with about 156 calories per serving.
