Weight Watcher'S Chocolate-Mint Parfaits
- 1/4 c. plus 2 Tbsp. water
- 3 Tbsp. sugar
- 2 Tbsp. unsweetened cocoa
- 1 1/2 tsp. cornstarch
- 1/4 tsp. mint flavoring
- 2 c. vanilla ice milk
- 1 Tbsp. plus 1 tsp. finely chopped pecans, toasted
- fresh mint sprigs (optional)
- Combine first 4 ingredients in a medium saucepan; stir well. Cook over medium heat 8 to 10 minutes, stirring constantly, until smooth and thickened.
- Remove sauce from heat and stir in mint flavoring.
- Spoon 1/4 cup ice milk into each of 4 parfait glasses. Top each with 1 tablespoon chocolate sauce.
- Repeat procedure with remaining ice milk and chocolate sauce.
- Sprinkle 1 teaspoon chopped pecans over each serving.
- Garnish with fresh mint sprigs, if desired.
- Serve immediately.
- Yields 4 servings with about 156 calories per serving.
