Chocolate Eclair Dessert

  1. Place 8 graham crackers in bottom of 9x13" baking dish.
  2. Mix vanilla pudding and 3 cups skim milk, let sit 2 minutes.
  3. Gently fold in Cool Whip.
  4. Pour half of vanilla pudding on graham crackers.
  5. Top with another 8 graham crackers.
  6. Pour remaining vanilla pudding over graham crackers.
  7. Top with last 8 graham crackers.
  8. Mix the chocolate pudding mix with 1 1/2 cups skim milk, let sit 2 minutes.
  9. Spread over graham crackers.
  10. Let sit overnight in refrigerator to soften the graham crackers.
