Spinach Mushroom Cheese Casserole

  1. Preheat oven to 350.
  2. Squeeze excess water from spinach and place in a mixing bowl. Add drained mushrooms, onions, garlic and softened cream cheese.
  3. Add the melted butter, eggs, and skim milk and mix very well.
  4. Fold in the cheddar cheese, salt and pepper.
  5. Pour into a 9x9 square baking dish.
  6. Bake at 350 for 45-50 minutes until bubbly and lightly brown on top.
