Hawaiian Meatballs
- 1 1/2 lb. ground beef
- 2/3 c. Cracker Meal
- 1/2 c. chopped onion
- 2/3 c. evaporated milk
- 1 tsp. salt
- 1 can pineapple chunks
- 2 Tbsp. cornstarch
- 1/2 c. vinegar
- 1/2 c. brown sugar
- 2 Tbsp. soy sauce
- 2 Tbsp. lemon juice
- 1 c. chopped green pepper
- 1 Tbsp. chopped pimento
- Mix ground beef, cracker meal, onion, evaporated milk and salt.
- Roll in flour.
- Brown meatballs in oil.
- Drain.
- Simmer in sauce for 15 minutes.
- To make sauce, drain pineapple and reserve juice.
- Measure pineapple juice and water to make 1 c. liquid. Blend with cornstarch until smooth.
- Stir in vinegar, brown sugar, soy sauce and lemon juice.
- Cook until thickened.
- Blend in green pepper and pimento.
- Add pineapple.
- Simmer 15 minutes with meatballs or sausage in.
- Enjoy!
