Stuffed Zucchini

  1. Split zucchini in halves lengthwise and scoop out seeds and membrane.
  2. Set aside.
  3. Saute green pepper and onion in butter until onion is transparent.
  4. Remove and set aside.
  5. Brown ground beef, separating with a fork.
  6. Add green pepper, onion and remaining ingredients.
  7. Place zucchini halves in a well-greased baking pan.
  8. Fill each half with corn stuffing.
  9. Pour 1/2 cup water in the bottom of the pan; cover with foil.
  10. Bake in a 350u0b0 oven until zucchini is tender.
  11. Remove foil and bake an additional 1/2 hour.
  12. Serves 6 to 8.
