Holiday Fruit Cake

  1. Combine cake mix, 1 egg, water, salt and lemon or brandy extract.
  2. Beat until smooth.
  3. Add remaining eggs, one at a time, beating well after each one.
  4. Sift flour over fruits and nuts.
  5. Mix well and stir into batter.
  6. Spray 2 loaf pans with vegetable cooking spray.
  7. Fill with batter; press down.
  8. Bake in very slow oven (275u0b0) for 2 1/2 or 3 hours or until done.
  9. (Place shallow pan of hot water on bottom of oven during baking.)
  10. Cool; remove cake from pans.
  11. Makes 4 1/2 pounds fruitcake.
