Holiday Fruit Cake
- 1 pkg. white cake mix
- 4 eggs
- 1/2 c. water
- 2 tsp. salt
- 2 tsp. lemon or brandy extract
- 1/2 c. oil
- 1/2 c. sifted all-purpose flour
- 1 lb. pecan halves
- 1 1/2 lb. mixed fruit
- 8 oz. chopped dates
- 1 lb. light raisins
- Combine cake mix, 1 egg, water, salt and lemon or brandy extract.
- Beat until smooth.
- Add remaining eggs, one at a time, beating well after each one.
- Sift flour over fruits and nuts.
- Mix well and stir into batter.
- Spray 2 loaf pans with vegetable cooking spray.
- Fill with batter; press down.
- Bake in very slow oven (275u0b0) for 2 1/2 or 3 hours or until done.
- (Place shallow pan of hot water on bottom of oven during baking.)
- Cool; remove cake from pans.
- Makes 4 1/2 pounds fruitcake.
