Lemonade Cookies
- 1 c. butter
- 1 c. granulated sugar
- 2 eggs
- 3 c. all purpose flour, sift before measuring
- 1 tsp. baking soda
- 6 oz. can lemonade concentrate, thawed and divided
- 2 tsp. finely grated lemon peel, optional
- granulated or coarse sugar
- Cream butter and sugar, add eggs and beat until light and fluffy.
- Sift together flour and soda; add to creamed mixture, alternating with 1/2 cup lemonade concentrate.
- Stir in lemon peel.
- Drop by teaspoonfuls.
- Bake at 400 degrees for 8 minutes or until lightly browned around the edges.
- Brush hot cookies with remaining lemonade concentrate the sprinkle with a little granulated sugar. Or, chill the dough, make balls and roll in coarse sugar, bake and glaze with concentrate.
- Makes 3 to 4 dozen cookies.
