Red Beans And Rice Cajun Style

  1. Rinse beans twice.
  2. Put in 4-quart heavy pot.
  3. Add water, ham and sausage.
  4. Put on medium heat.
  5. Chop and add onions, celery and green onions.
  6. Add thyme and bay leaves.
  7. Reduce heat when it reaches boiling point and cover.
  8. Stir every 20 to 30 minutes for 3 hours or until tender.
  9. Mash 1/4 of the beans.
  10. After cooking, taste and season with Tabasco sauce or cayenne pepper.
  11. Ladle beans and sauce over rice to serve hot.
