Spinach Ricotta Dip
- 1 qt. fresh spinach, chopped
- 1/2 c. onion, chopped
- 1 (8 oz.) pkg. cream cheese
- 3/4 c. low-fat Ricotta cheese
- 1/2 tsp. basil leaves, crushed
- 1/2 tsp. oregano leaves, crushed
- 1/4 tsp. salt
- 1/8 tsp. garlic powder
- 1/8 tsp. pepper
- 3/4 c. tomato, chopped
- 2 Tbsp. Parmesan cheese, grated
- Preheat oven to 350u0b0.
- Place spinach and onion in small saucepan with small amount of water.
- Cover and cook 5 minutes or until tender; drain well.
- Beat cheeses and seasonings in small mixing bowl at medium speed until well blended.
- Stir in spinach mixture and spread into 9-inch pie plate.
- Bake 15 to 20 minutes or until thoroughly heated.
- Top with tomato and Parmesan cheese. Serve with crisp rye crackers or bagel chips.
- Makes 12 servings.
