Heavenly Cheesecake
- 1 1/2 c. graham cracker crumbs
- 6 eggs, separated
- 3 (8 oz.) pkg. cream cheese
- 3/4 c. sugar
- 1/2 pt. light cream
- 1 tsp. vanilla
- 1/2 tsp. lemon rind
- Grease a 9-inch spring-form pan well with margarine.
- Line with graham cracker crumbs, pressing onto bottom and sides of pan with a teaspoon.
- Let set in refrigerator.
- With electric mixer, beat egg whites until stiff but not dry.
- Beat egg yolks until lemon colored.
- In large bowl of electric mixer, beat cream cheese and sugar until blended.
- Add beaten egg yolks, light cream, vanilla and lemon rind to creamed mixture.
- Beat until blended. Fold in stiffly beaten egg whites.
- Pour into crumb lined pan. Bake at 300u0b0 for 1 hour and 40 minutes.
- Let cool in oven for 1 hour.
- Remove; cool in refrigerator.
