Cream Of Broccoli Soup

  1. Saute the onion in butter with bay leaf until the onion is clear.
  2. Add chopped green pepper, chopped broccoli, water or broth and salt.
  3. Cook 10 minutes or until broccoli is tender, but still bright green.
  4. Puree with milk in blender until smooth.
  5. Whisk in sour cream and seasonings.
  6. Steam broccoli just until done. Combine flowerets with soup in a large double boiler.
  7. Heat gently and serve.
  8. Top with minced scallions.
