Cream Of Broccoli Soup
- 4 Tbsp. butter
- 1 1/2 c. chopped onion
- 1 medium green pepper, chopped
- 4 c. chopped broccoli
- 1 c. thinly sliced broccoli flowerets
- 1 tsp. salt
- 1 1/2 c. water or chicken broth
- 2 c. milk
- 1/2 c. sour cream or yogurt
- 1 bay leaf
- pinch of spice
- black pepper
- dash of tamari sauce
- dash of thyme or basil
- chopped scallions
- Saute the onion in butter with bay leaf until the onion is clear.
- Add chopped green pepper, chopped broccoli, water or broth and salt.
- Cook 10 minutes or until broccoli is tender, but still bright green.
- Puree with milk in blender until smooth.
- Whisk in sour cream and seasonings.
- Steam broccoli just until done. Combine flowerets with soup in a large double boiler.
- Heat gently and serve.
- Top with minced scallions.
