Streusel Apple And Raisin Muffins
- 1/2 cup brown sugar
- 1/2 cup applesauce
- 1/4 cup canola oil
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup raisins
- 3/4 cup diced peeled apple
- Topping ingredients
- 2 tablespoons brown sugar
- 2 teaspoons flour
- 1/2 teaspoon cinnamon
- 1 teaspoon butter
- Preheat oven to 375 degrees, spray 12 muffin cups with nonstick spray or use paper muffin cups.
- In a large bowl, combine sugar, applesauce, oil, egg and vanilla until well mixed.
- Combine flour, baking soda, baking powder and cinnamon; stir into bowl just until incorporated.
- Stir in apples & raisins.
- Pour into muffin cups, filling two-thirds full.
- Topping: In a small bowl, combine sugar, flour, and cinnamon; cut in butter until crumbly.
- Sprinkle evenly over muffins.
- Bake for 20 minutes or until tops are firm to the touch.
