Sweet Green Tomato Pickles
- 7 lb. green tomatoes, thinly sliced
- 2 gal. water
- 2 c. pickling lime
- 9 c. apple cider vinegar
- 10 c. sugar
- 1 tsp. salt
- 3 tsp. pickling spice
- 1 tsp. whole cloves
- 1 tsp. celery seed
- In a large plastic container, soak tomatoes in water and lime mixture for 24 hours. Rinse well and soak in cold water 3 hours. Combine vinegar, sugar and salt in another container.
- Place pickling spice, cloves and celery seed in cheesecloth bag. Add to vinegar mixture.
- Set aside. Drain water from tomatoes; pour vinegar mixture over the tomatoes.
- Soak overnight.
- Next morning, simmer mixture until the tomatoes are transparent (about 50 minutes). Fill in hot sterilized jars and process in boiling water bath 5 minutes.
