Grandma'S Christmas Cookies
- 1 lb. margarine
- 2/3 c. white sugar
- 1 lb. brown sugar
- 2 tsp. vanilla
- 4 c. flour
- 3 tsp. pumpkin pie spice
- 2 tsp. soda
- 4 c. rolled oats
- 4 eggs
- 1 1/2 c. chopped nuts
- 1 c. raisins
- 1 c. candied fruit or chocolate chips
- Cream together the margarine, sugars and vanilla.
- Sift together the flour, spice and soda.
- Measure and set out the oats, eggs, nuts, raisins and candied fruit or chocolate chips.
- In a large mixing bowl with creamed mixture, add 2 cups of flour mixture, mixing well.
- Add an egg, then the remaining flour mixture; mix well.
- Add an egg, then remaining oats.
- Work in last egg with the nuts, raisins and candied fruit or chocolate chips. (Note:
- If using candied fruit, take some of the flour and mix with the fruit to keep fruit from sticking together.)
- Dough should be stiff, but moist.
- Bake at 350u0b0 for 8 to 12 minutes, depending on size of cookie.
- Yields 8 dozen large to 16 dozen medium cookies.
