Pumpkin Cookies
- 1/2 c. oleo
- 1 1/2 c. packed brown sugar
- 2 eggs
- 1 c. cooked pumpkin
- 1 tsp. vanilla
- 1 tsp. grated lemon peel
- 1 tsp. lemon juice
- 2 1/2 c. sifted flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1 1/2 tsp. pumpkin pie spice
- 1/4 tsp. ground ginger
- 1 c. chopped walnuts
- 1/2 tsp. cinnamon
- Heat oven to 375u0b0.
- Grease cookie sheets.
- Cream oleo and sugar until fluffy.
- Beat in eggs, one at a time.
- Stir in pumpkin, vanilla, peel and juice.
- Sift flour, baking powder, salt and spices together.
- Add to oleo mixture.
- Stir in walnuts.
- Drop by rounded teaspoonfuls on cookie sheet 1-inch apart.
- Bake 12 to 14 minutes.
- Cool on wire rack.
- Makes 4 dozen cookies.
