Hamburger Soup
- 1 1/2 lb. ground beef
- 1 1/2 c. onion, chopped
- 1/4 c. green pepper, chopped or canned green chiles, seeded and chopped
- 1 garlic clove, minced
- 2 large tomatoes, chopped
- 2 c. carrots, grated
- 1/2 lb. mushrooms, minced or 1 (4 oz.) can mushrooms, drained
- 1 (46 oz.) can tomato juice
- 2 (10 3/4 oz.) cans cream of mushroom soup
- 1 tsp. basil
- 1 tsp. salt
- 1/2 tsp. paprika
- 1 tsp. cumin
- 1 tsp. chili powder
- 1/4 tsp. pepper
- 1 (16 oz.) can red kidney beans, drained or 1 (16 oz.) can yellow corn, drained
- grated Cheddar cheese
- Brown meat in a large heavy pot until it loses its color. Drain off fat.
- Add onion, peppers (or chiles), garlic and mushrooms.
- Cook until vegetables are soft.
- Add remaining ingredients, except cheese, and mix well.
- Bring to a boil.
- Cover and simmer 1/2 to 1 hour.
- Adjust seasonings to taste.
- Sprinkle cheese on each serving.
- Yields 6 to 8 servings.
