Fantastic Fudge
- 1/3 c. Hershey's cocoa
- 3 c. sugar
- 1/8 tsp. salt
- 2 c. milk
- 1/3 c. (5 Tbsp.) butter or margarine
- 1 tsp. vanilla flavoring
- 1 c. chopped pecans
- Use butter or margarine to grease lightly an 8 or 9-inch square pan.
- Thoroughly mix the cocoa, sugar and salt in a heavy 4-quart saucepan.
- Stir in milk and mix thoroughly with a wooden spoon.
- Bring mixture to a boil over medium heat, stirring constantly.
- Let the mixture boil, stirring occasionally, until it reaches a temperature of 234u0b0 or until a small amount of the mixture can be formed in a soft ball after being dropped in a cup of cold water.
- Remove from heat, add butter and vanilla.
- Do not stir.
- Cool at room temperature to 110u0b0 (pan barely warm to touch).
- Beat with wooden spoon until fudge begins to thicken and lose gloss.
- Stir in pecans and quickly spread in the prepared pan.
- Cool completely.
- Cut into 1-inch squares.
