Fantastic Fudge

  1. Use butter or margarine to grease lightly an 8 or 9-inch square pan.
  2. Thoroughly mix the cocoa, sugar and salt in a heavy 4-quart saucepan.
  3. Stir in milk and mix thoroughly with a wooden spoon.
  4. Bring mixture to a boil over medium heat, stirring constantly.
  5. Let the mixture boil, stirring occasionally, until it reaches a temperature of 234u0b0 or until a small amount of the mixture can be formed in a soft ball after being dropped in a cup of cold water.
  6. Remove from heat, add butter and vanilla.
  7. Do not stir.
  8. Cool at room temperature to 110u0b0 (pan barely warm to touch).
  9. Beat with wooden spoon until fudge begins to thicken and lose gloss.
  10. Stir in pecans and quickly spread in the prepared pan.
  11. Cool completely.
  12. Cut into 1-inch squares.
