Fresh Apple Pie
- 2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 c. milk
- 3 Tbsp. vegetable oil
- 1 1/2 c. wheat cereal (bite-size squares)
- 1 c. finely chopped, peeled apples
- 3/4 c. brown sugar, packed
- 1/2 c. chopped nuts
- Preheat oven to 350u0b0.
- Grease 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
- In a large mixing bowl, stir together flour, baking powder, cinnamon and salt.
- In a separate bowl, combine eggs, milk, oil and cereal.
- Stir to break up cereal.
- Mix in apple, brown sugar and nuts.
- Add all at once to dry ingredients.
- Stir just until moistened.
- Turn into pan.
- Bake 65 to 70 minutes until tester comes out clean.
- Let cool 15 minutes before removing from pan. Makes 1 loaf.
