Ali'S Oatmeal Cookies

  1. Preheat oven to 350u0b0.
  2. In large bowl, mix shortening, sugar, eggs and vanilla.
  3. Beat at medium speed with electric mixer until well blended.
  4. Combine 1 1/2 cups of flour, baking soda and salt. Stir into the shortening mixture.
  5. Stir in oatmeal.
  6. Stir in nuts. Toss apricots and remaining 1 tablespoon flour.
  7. Stir into dough. Stir in white chocolate chips.
  8. Shape dough into 1 1/2-inch balls.
  9. Flatten slightly and place 2 inches apart on ungreased baking sheets.
  10. Bake 11 to 13 minutes until slightly moist in the center and just beginning to brown around the edges.
  11. Remove immediately to wax paper-covered paper towels.
