Artichoke Chicken
- 3 to 4 lb. chicken thighs
- 2 bottles marinated artichokes, drained or 1 can artichokes, drained
- 1/2 lb. fresh sliced mushrooms
- 1/2 tsp. paprika
- 1/4 tsp. rosemary
- 4 Tbsp. butter
- 2 to 3 Tbsp. flour
- 3 Tbsp. sherry
- 2/3 c. chicken broth
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- Sprinkle chicken with salt, pepper and paprika; brown in butter.
- Put chicken in casserole dish.
- Add 1 teaspoon butter to drippings in pan and saute mushrooms.
- Sprinkle flour on mushrooms.
- Stir in broth, rosemary and sherry.
- Cook for a few minutes.
- Arrange drained artichokes between chicken.
- Pour mushroom mixture over all.
- Cover and bake at 350u0b0 for 40 minutes. Serves 6 to 8 with rice.
