Betty'S Chili
- 1/2 lb. pinto beans
- 1 1/2 lb. green peppers (3 large)
- 1 1/2 lb. onions (3 large)
- 2 1/2 lb. ground meat
- 2 tsp. salt
- 1 1/2 tsp. cumin seed
- 5 c. canned tomatoes
- 1 1/2 Tbsp. salad oil
- 1/2 c. butter
- 1/3 c. chili powder
- 1 1/2 tsp. pepper
- Wash beans and place in large bowl covered by 2-inches of water. Soak overnight. Simmer in the same water until beans are tender. Add tomatoes and cook 5 minutes more. Saute green peppers 5 minutes in oil. Add onions and cook until tender. In a large skillet, melt butter and saut beef 15 minutes (until done). Add meat to peppers and onions. Stir in chili powder and cook 10 minutes. Add this mixture to the beans. Season with salt, pepper and cumin seed. Simmer 1 hour. Remove cover and cook 30 more minutes.
