Spinach Spoon Bread
- 1 (9 or 10 oz.) pkg. frozen onions in cream sauce
- 1 (10 oz.) pkg. frozen, chopped spinach
- 2 eggs, slightly beaten
- 1 c. sour cream
- 1/2 c. melted butter or margarine
- 1/4 tsp. salt
- 1 (8 1/2 oz.) pkg. corn muffin mix
- 1/2 c. (2 oz.) shredded Swiss cheese
- Prepare onions in cream sauce according to package directions. Set aside. Cook spinach according to package directions and drain well.
- In a large mixing bowl, mix onions, spinach, eggs, sour cream, butter or margarine and salt. Stir in corn muffin mix. Pour mixture into large greased casserole dish. Bake in a
- 350u0b0 oven for 30 to 35 minutes or until wooden pick comes out clean. Sprinkle Swiss cheese on top of corn bread and bake for 2 minutes or until cheese is melted. Serve warm.
