King Ranch Casserole
- 1 c. diced onion
- 1/2 lb. fresh or canned mushrooms
- 1/4 c. butter
- 1 can condensed cream of chicken soup
- 1 can condensed cream of mushroom soup
- 1 can Ro-Tel tomatoes (tomatoes canned with green chilies)
- 2 cans chopped green chilies
- 1 garlic clove, minced
- 1 Tbsp. chili powder
- 2 c. diced, cooked chicken (I use at least 5 chicken breasts)
- 1 c. chicken broth
- 1 pkg. (8 oz. or so) soft corn tortillas, torn up
- 1 lb. or more grated Cheddar cheese
- Saute the
- onion
- and
- mushrooms in melted butter.
- Add the soups, Ro-Tel tomatoes, garlic and chili powder.
- Stir and simmer a
- couple
- of
- minutes.
- Meanwhile,
- placethe torn up tortillas inthe
- chicken
- broth for 10 minutes to absorb the moisture. Place the
- pieces in the bottom of the shallow 13 x 9-inch oblong baking dish.
- Fill the casserole with alternate layers of diced chicken, sauce and cheese.take in a preheated 350u0b0 oven for 30 minutes or microwave cook at 75% power for about 12 minutes. Serve witht
