French Casserole
- 6 slices bacon
- 2 lb. ground beef or pork and beef mixture
- 1 can (16 oz.) red kidney beans, drained
- 1 can (16 oz.) white Northern beans, drained
- 1 can (16 oz.) sliced carrots, drained
- 1 can (16 oz.) tomatoes, undrained and broken up
- 1 Tbsp. parsley flakes
- 2 tsp. salt
- 1 tsp. thyme
- 1/4 tsp. pepper
- Saute bacon in a large pan until fat starts to cook out. Remove and drain on paper towels.
- Shape ground beef in a large patty.
- Brown for 5 minutes on each side in same pan.
- Pour off drippings, then break meat into chunks.
- Stir beans, carrots and tomatoes into meat.
- Add seasonings.
- Heat to boiling.
- Spoon into a 10-cup baking dish.
- Place bacon on top.
- Bake at 350u0b0 for 1 hour.
- Makes 8 servings.
