Louise'S Main-Dish Pasta Salad
- 1 c. uncooked macaroni
- 2 small carrots, sliced
- 2 small onions (green), chopped
- 1 (2 oz.) jar diced pimento, drained
- 1 c. drained canned kidney beans
- 3/4 c. diced celery
- 1/4 c. cooked English peas
- 2 Tbsp. chopped parsley
- 1/4 c. Italian salad dressing
- 2 Tbsp. mayonnaise
- 1/8 tsp. marjoram
- 1/8 tsp. pepper
- 2 medium tomatoes, sliced
- 2 hard-cooked eggs, cut
- lettuce leaves
- parsley sprigs
- Cook macaroni according to directions.
- Omit salt.
- Drain. Combine with next 11 ingredients.
- Toss well, chill 1 hour.
- Spoon into lettuce leaves that line dish.
- Arrange tomatoes on top and egg wedges around and garnish with parsley sprigs.
