Just In Case Pie
- 1 ready-made chocolate-crumb pie crust
- 1 env. unflavored gelatin
- 1/4 c. cold water
- 2 c. heavy cream, divided
- 1 c. semi-sweet chocolate chips
- 2 eggs
- 1 tsp. vanilla extract
- 1 c. caramels (about 24)
- 2 Tbsp. butter
- Prepare crust as directed.
- Sprinkle gelatin over water in small saucepan; let stand one minute.
- Stir over low heat until gelatin is dissolved, about 3 minutes.
- Stir in one cup of the heavy cream.
- Heat to a boil.
- Then pour into a blender.
- Add the chips and process until the chips are melted, about one minute. When processing, add another 1/2 cup of cream, eggs and vanilla; process until well blended.
- Pour mixture into large bowl, chill for 15 minutes until thick.
