Thai Rice

  1. Heat oil in large nonstick skillet over med high.
  2. Add onion and next 4 ingredients; saute 3 min or til onion is tender.
  3. Add rice; saute 1 minute.
  4. Stir in broth, rind and salt; bring to a boil.
  5. Cover, reduce heat and simmer 45 min or til rice is tender.
  6. Remove from heat and let stand 10 minute.
  7. Stir in cilantro.
  8. Serve with lime wedges.
