Frozen Fruit Salad
- 6 oz. lemon jello
- 1 c. orange juice
- juice from peaches plus enough water to make 1 c.
- 1 can sliced peaches
- juice of 1 lemon
- 1/4 tsp. salt
- 2 Tbsp. sugar
- 1 (20 oz.) can crushed pineapple with juice
- 2 cans mandarin oranges, drained
- 1 pt. fresh strawberries, sliced and slightly sweetened
- 1 c. chopped pecans
- 16 oz. softened cream cheese
- 1 c. Hellmann's mayo
- 1 c. sour cream or fat-free substitute
- Bring orange juice and juice from peaches to boil and add jello, lemon juice, salt and sugar; cool to room temperature.
- Cut up peaches and blend with other fruits.
- Cool.
- Beat cream cheese, Hellmann's mayonnaise and sour cream until smooth and well blended.
- Blend into cooled jello and chill about 1 hour.
- Stir fruit and nuts into jello mix.
- Pour into pans or Pyrex dishes and freeze.
- Allow to stand at room temperature about 30 minutes before serving.
- Serve on crisp lettuce and garnish with whole strawberries.
- Serves 20.
